Cooking for your Health: Smoked Salmon Tartare

Party food can be healthy, too. In fact, during the festive season, it’s important to have a few healthy recipes up our sleeves that are fancy enough to be invited to the holiday table while balancing the season’s excess. Smoked Salmon Tartare is a perfect multi-tasking appetizer: It has fresh, bold flavors, is rich in protein, B vitamins, and calcium and is low-fat to boot. It may be dressed up and served on brioche toasts, or kept more casual, presented on baguette slices, or, in this case, whole grain pumpernickel bread. Garnish it with fresh herbs and lemon, and don’t forget to pass the champagne – it’s the party season, after all.

Smoked Salmon Tartare

For best results, finely chop the salmon, onion and chives in similar minced size. I prefer to do this by hand with a knife, rather than use a food processor, which will often create a paste.

8 ounces smoked salmon, finely chopped
1/4 cup finely chopped red onion
2 tablespoons Greek yogurt
2 tablespoons fresh lemon juice
2 tablespoons finely chopped dill
1 tablespoon finely chopped chives
Whole wheat or pumpernickel rounds
Sea salt
Freshly ground black pepper

Finely dice the smoked salmon. Transfer to a bowl. Fold in the onion, yogurt and lemon juice. Add the dill and chives and gently combine. Mound spoonfuls of the salmon on pumpernickel or whole wheat rounds. Sprinkle with sea salt (to taste) and freshly ground black pepper. Serve garnished with lemon segments.

Autumn Salads: Spinach with Goat Cheese, Cranberries, Walnuts and Crispy Prosciutto

Just because it’s cold outside doesn’t mean we can’t have a salad. In fact, when the temperature drops, it’s even more important to eat vitamin and nutrient-rich vegetables. We might be craving stews and braises in the warmth of the kitchen, yet there is still a place for a salad on the menu. Fall salads are more robust than their summer counterparts. What they might lack for in heat, they make up in substance. Sturdy earthy greens, such as spinach, chicories, kale or radicchio, move into the salad bowl. Nuts and seeds add nutrients and heft. Dried fruit or seasonal pears, apples, persimmons and pomegranates add sweetness and color. Dressings become more rich and intense, with mustard, aged balsamic vinegar and garlic. Cheese and salume crown the salad, bringing a satisfying umami quality, as well as salt and extra protein. The variations are numerous, but you can be sure the results will be delicious and perfectly in season.

Spinach Salad with Goat Cheese, Dried Cranberries, Walnuts and Crispy Prosciutto

Serves 2 to 4.

Vinaigrette:
2 tablespoons balsamic vinegar
1 tablespoon fresh orange juice
1 small garlic clove,  minced
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/2 cup extra-virgin olive oil

Salad:
2 ounces prosciutto
8 ounces baby spinach leaves
1/3 cup walnut halves, lightly toasted, coarsely chopped
1/4 cup dried cranberries
2 ounces fresh goat cheese
1 teaspoon finely grated orange zest

Make the vinaigrette:
Whisk all of the ingredients except the olive oil in a small bowl. Add the oil in a steady stream, whisking constantly, until emulsified. Taste for seasoning.

Prepare the salad:
Heat oven to 350 F. Arrange the prosciutto in one layer on a baking sheet lined with parchment. Bake in oven until crisp, about 20 minutes. Remove and cool. Break in to shards.
Place the spinach, walnuts and cranberries in a large bowl. Drizzle with half of the dressing. Toss to combine. Add more dressing to desired taste and toss again. Arrange on serving plates. Crumble the goat cheese over the spinach, then scatter the prosciutto shards over the salad. Sprinkle with orange zest.

This is my second recipe for Legends from Europe, using Prosciutto di San Daniele. These appetizer rolls are inspired by Vietnamese rice paper spring rolls, with a decided Italian twist. Prosciutto replaces the rice paper as the wrap, adding a salty savory component to the crunchy fresh vegetables and piquant Parmigano filling. No dip required: instead, olive oil, lemon and mint add flavor, aroma and a touch of moistness. You might want to double the batch, because these tend to get gobbled up before you can say Prosciutto di San Daniele.

Prosciutto Rolls with Arugula, Fennel and Mint
Makes 12

6 slices Prosciutto di San Danielle, halved lengthwise
Extra-virgin olive oil
Finely grated lemon zest
Freshly ground black pepper
2 cups loosely packed baby arugula leaves
1 medium fennel bulb, fronds trimmed, halved lengthwise, each half thinly sliced lengthwise
4 ounces Parmigiano cheese, shaved
1/2 cup mint leaves, torn in half if large

Place a slice of prosciutto on a work surface, short end closest to you. Lightly brush with olive oil. Sprinkle with a pinch of lemon zest and a little freshly ground black pepper. Arrange 6 to 8 arugula leaves at the base. Place a few slices of fennel and Parmigiano shavings over the arugula. Top with a few pieces of mint. Roll up from the base, tucking the prosciutto tightly around the vegetables. Continue to roll, placing 1 or 2 additional arugula leaves in the fold as you roll up. Place seam side down on a platter. Repeat with remaining ingredients.

Legends of Europe: Prosciutto Figs with Goat Cheese and Rosemary

My mission (should I choose to accept it):  To create an original recipe using Prosciutto di San Daniele from Legends from Europe. Legends from Europe is a 3 year campaign funded by the European Union and launched in the U.S. to increase awareness and celebrate “the legendary quality, tradition and taste” of five authentic PDO products (Protected Designation of Origin) from Europe: Prosciutto di Parma, Parmigiano Reffiano, Prosciutto di San Daniele, Grana Padano and Montasio.

As luck would have it, these 5 products happen to be some of my favorites. The biggest challenge I faced was not in accepting this mission but deciding which product to feature. Fortunately, the folks at Legends helped me with my choice and assigned me the Prosciutto di San Daniele.

Prosciutto di San Daniele is named for the region of San Daniele in northeastern Italy where it enjoys a unique micro-climate nestled between the Dolomite Alps and the Adriatic Sea. The ham is left to slow-cure naturally, following a 2,000 year-old tradition introduced by the Celts. Today, Prosciutto di San Daniele is considered a delicacy  with its mild flavor and delicate texture. This week, I will be posting a few recipes I’ve created with Legends’ Prosciutto di San Daniele.

Prosciutto Figs with Goat Cheese and Rosemary

A small rosemary sprig does double duty as a toothpick and aromatic, infusing the figs and goat cheese with its flavor as they bake in the oven. Makes 16 hors-d’oeuvres

8 ripe figs
2 ounces soft fresh goat cheese
1/4 teaspoon freshly ground black pepper
8 slices “Legends from Europe” Prosciutto di San Daniele, halved lengthwise
16 3/4-inch rosemary sprigs with stem, plus 1/4 cup fresh rosemary leaves for garnish
Extra-virgin olive oil
Runny honey
Finely grated lemon zest for garnish

Heat oven to 375 F. Halve figs lengthwise. Place figs on a work surface, skin side down. Gently make a small indentation in each center with a teaspoon. Mix goat cheese and pepper together in a small bowl. Fill the indentation with goat cheese, about 1/2 teaspoon. Wrap a prosciutto slice, cross-wise, around fig. Spear a rosemary sprig through the center to hold the prosciutto in place. Repeat with remaining fig halves. Place figs in a baking dish. Lightly brush prosciutto with olive oil. Bake in oven until prosciutto begins to crisp, about 15 minutes. Remove from oven and transfer figs to a platter. Remove baked rosemary sprigs and discard (they will be brown). Replace with a few fresh rosemary leaves, without stem. Lightly drizzle figs with honey. Sprinkle with lemon zest. Serve warm.

This tart is a vehicle for caramelized onions. It’s also inspired by an appetizer I ate years ago in a Swiss auberge overlooking the Lake of Geneva, near our home at the time. It’s been so long, I don’t remember the name of the restaurant, but I do remember the onion tart. It was simple and rustic, just like the half-timbered dining room with its open fire where we tasted it. As we settled into our deep chairs and read the menu, our kir royales (champagne and creme de cassis) would arrive, accompanied by a complimentary sliver of tarte d’oignon. Sweet, rich and minimal, this tart was perfection in its simplicity. Today I make a version of this memory and enjoy another view from our California home. It’s so rich that I like to serve it a similar way, cut in thin slivers, served with a glass of wine.

Caramelized Onion Tart
Serves 8-12

For the dough – adapted from a recipe by Alice Waters:
1 cup all-purpose flour
1/2 teaspoon salt
6 tablespoons unsalted butter, chilled, cut in 1/4 inch cubes
3 tablespoons ice water

Stir flour and salt together with a fork. Toss in butter. Work the butter into the flour with a fork or your fingertips until it resembles coarse meal, with some pieces of the butter apparent. Sprinkle in the water while stirring with a fork until the dough comes together, adding another tablespoon of water if necessary. Form into a ball and flatten. Wrap in plastic wrap and refrigerate 1 hour

For the filling:
2 tablespoons olive oil
2 pounds yellow onion, peeled and thinly sliced
1 teaspoon salt
2 tablespoons port wine
1 teaspoon freshly ground black pepper
2 ounces finely grated Gruyère cheese
1 teaspoon fresh thyme, plus extra for garnish
1 egg, slightly beaten

Heat olive oil over medium heat in a deep skillet or pot. Add onions and salt. Cook onions, stirring occasionally, until they are golden brown, soft and squidgy, about 30 minutes. Add port wine and cook, stirring, 2 minutes. Remove onions from heat and stir in the pepper. Cool slightly.
While the onions are cooling, roll out the dough to fit in the bottom and up the side of a 10-inch round tart tin. Sprinkle half of the cheese over the bottom of the tart. Spoon onions into the shell and spread evenly. Sprinkle 1 teaspoon thyme over the onions. Brush the exposed crust rim with the egg wash. Sprinkle the tart and crust with the remaining cheese.
Bake in a preheated 375 F. oven until the crust is firm and golden and the onions have turned a rich golden brown, without blackening, about 30 minutes. Remove and cool slightly. Serve slightly warm or at room temperature garnished with thyme sprigs.

I was gifted some loot this weekend. Loot, for me, often comes in the edible form, and this gift – a 2 pound package of warm smoked Alaskan salmon – didn’t disappoint. It managed to sit in my refrigerator for all of 18 hours before I couldn’t stand it anymore and ripped the plastic wrapping open for a taste. And another. Before things got too out of hand, I decided to whip up a recipe to use the rest of the salmon before I devoured the whole slab of fish. Naturally, I needed to taste the recipe as I tweaked it, so a small, er, nicely sized bowl managed to remain untouched until dinner when we made these as an appetizer.

Smoked Salmon Salad Tartines

Depending on your mood (or where you might like to be) these can be called tartines, bruschette or open-face sandwiches. For a lighter version, omit the bread and serve the salmon salad simply on the kale leaves. Makes 10.

10 ounces warm smoked salmon, flaked
1/4 cup finely chopped red onion
1/4 cup chopped Italian parsley leaves
2 tablespoons freshly squeezed lemon juice
1 tablespoon Greek yogurt or sour cream
2 teaspoons capers, chopped
1 to 2 teaspoons Sriracha or hot sauce, to taste
1 teaspoon freshly ground black pepper
10 slices baguette, cut 1/2-inch thick, or 5 slices peasant/levain bread, cut in half
Extra-virgin olive oil
Sea salt
10 Tuscan kale leaves (or baby gem lettuce leaves)
1/2 lemon

Combine the salmon, onion, parsley, lemon juice, yogurt, capers, Sriracha and pepper in a bowl. Mix with a fork to thoroughly combine. Brush the bread with olive oil and lightly sprinkle with sea salt. Toast in oven until light golden on both sides. Remove and cool slightly. Tear 2-inch tips off of the kale leaves. (Save the rest of the kale for another use). Place a leaf tip on bread. Brush with olive oil. Spoon salmon salad over the kale. Squeeze with half lemon.

For the past month I’ve been receiving a box of organic produce each week from a new CSA (Community Supported Agriculture) in the Bay area called Full Circle. They are the West Coast’s leading organic produce delivery service, and have recently expanded into Northern California, supplying farm fresh ingredients from local farmers to the Bay area community. They reached out to me with an invitation to try their service. Since I am a sucker for produce and buy organic as much as possible, how could I resist? Now, each Wednesday morning I wake to a carton outside my front door filled with a selection of fruits and vegetables supplied by local organic farms. It feels like Christmas. I never know what I will get (although, they are happy to supply any requests I might have), but I prefer the surprise. It saves me a few trips to the market, and my refrigerator stays full with just-fresh produce that I use for cooking inspiration.

I made this tart as an appetizer for dinner last night. It was a great way to use the Swiss Chard I received in my box this week. I also added kale, since I always have kale in my refrigerator. I served the tart at room temperature and cut it in random pieces that I arranged on a cutting board for everyone to eat with their fingers. It was a nice rustic presentation that tasted great with a glass of chilled rosé on a warm summer evening.

Swiss Chard and Kale Frittata
Loosely adapted from a recipe by Mario Batali

Serves 4 to 6 as a light course or 8 as an appetizer

2 pounds Swiss chard and/or kale, washed, tough stems removed
Salt
2 tablespoons extra-virgin olive oil
1 large yellow onion, thinly sliced
2 garlic cloves, chopped
1/2 teaspoon red chili flakes
1/2 cup Italian parsley sprigs, coarsely chopped
4 large eggs
1/2 cup finely grated Pecorino Romano cheese, divided
1/2 teaspoon freshly ground black pepper
1/4 cup breadcrumbs (I use Panko)

Heat the oven to 350 F. Bring a large pot of salted water to a boil. Add the chard and kale. Blanch until the greens soften and brighten in color, 2 to 3 minutes. Drain the greens, then refresh under cold water. Lay the leaves on a kitchen towel and blot dry. When cool enough to handle, coarsely chop.
Heat 2 tablespoons olive oil in a large (12-inch) oven-proof skillet over medium-high heat. Add onions, garlic, chili flakes and 1/2 teaspoon salt. Sauté until onions are limp and turning golden brown. Add the chard and kale. Sauté until the greens are wilted and all of the ingredients are well incorporated. Remove the skillet from heat.
Whisk eggs, 1/4 cup grated cheese, 1/2 teaspoon salt and black pepper together in a bowl. Pour over the greens. Gently nudge the greens around to evenly distribute the eggs. Mix the remaining 1/4 cheese and breadcrumbs together in a small bowl. Sprinkle evenly over the tart. Bake in oven until eggs are set and the top of the tart is tinged golden brown, about 45  minutes. If desired, run the tart under the broiler to further brown the top, 1 minute. Serve warm or at room temperature.

Bloody Mary Gazpacho

I’ll have a splash of vodka with my soup, please.

If heat could speak, then it was shouting this weekend. Summer arrived with a bang, and the temperature soared to triple digits. When it’s that hot, appetites wane and thirst dominates. Food takes on a cool and liquid quality. It’s time for Gazpacho.

Gazpacho is a raw tomato-based soup blended with a vegetable bowl of produce. It’s perfect when the weather is stifling. No cooking is required, the spiced tomato juice quenches thirst, and a confetti of chopped vegetables refresh and nourish. I prefer to keep my gazpacho chunky, taking pleasure in each slurpy mouthful of crunchy vegetables mingling with cool juice. In this recipe, I’ve taken the variation one step further by adding celery, Worcestershire sauce and a generous squirt of Tabasco, thus evoking a Bloody Mary. Why stop there? If you’re in the mood and appropriately mature, serve the soup in a glass and add a shot of vodka for a wondrous beverage/soup/salad in a glass – a perfect antidote for a hot and shouty day.

Bloody Mary Gazpacho

Serves 6

4 cups tomato juice
2 vine-ripened tomato, stemmed and seeded, finely diced
2 celery stalks, finely diced
1/2 English cucumber (or 2 Persian cucumbers), seeds removed, finely diced
1 small jalapeño pepper, stemmed and seeded, minced
1 large garlic clove, minced
1/2 medium red onion, finely chopped
2 tablespoons fresh lime juice
2 teaspoons Worcestershire sauce, or to taste
1 tablespoon extra-virgin olive oil
2 teaspoons prepared horseradish
1 teaspoon kosher salt
1 teaspoon Tabasco™ sauce
1/2 teaspoon freshly ground black pepper
2 tablespoons finely chopped Italian parsley leaves
Vodka
Parsley sprigs for garnish
Lime wedges

Combine all the ingredients in a large bowl. Stir to blend and taste for seasoning. Cover and refrigerate for at least 4 hours to chill and allow the flavors develop. Before serving, stir in the vodka if using. For each 1 cup (8 ounces) of gazpacho, add ½ ounce vodka (or to taste). Serve garnished with parsley sprigs and lime wedges for squeezing.

The avocado is a healthy staple in our California kitchen.  Avocados are packed with vitamins, minerals and fiber and high in monounsaturated fat.  They are rich in potassium, zinc, and B vitamins, as well as vitamins C, E and K.  Due to their creamy texture and subtle flavor, the avocado is a perfect base for dips, drinks and even ice cream, while their coolness provides a foil to spice and heat in salsas and salads. Having said that, my favorite way to eat an avocado is on grilled bread with lemon and sea salt. When I feel extra fancy, I reduce balsamic vinegar to a viscous syrup which I  paint on the avocado slices. The only adornment required is a pinch of sea salt and a shower of black pepper. Spiced Meatballs with Cranberry Compote, Yogurt and Dill

It’s time to get fresh and meaty. I created this recipe for an upcoming class I am teaching at Cavallo Point in Sausalito, California on Scandinavian cooking. While traditional Scandinavian cooking may be heavy and meat focused (especially in the winter) it delightfully tips to an abundance of fresh produce in the warmer, brighter summer months. This recipe marries the Nordic climate extremes with a spin on the Swedish meatball, which is traditionally pan-fried and then napped with a warm cream sauce. These ground meat patties are transformed into fun finger food, freshened and brightened with tufts of parsley and dill. The heavy sauce is replaced by crisp lettuce leaves for wrapping  and a sweet-piquant cranberry compote and a dab of yogurt.  Continue reading Spiced Meatballs with Cranberry Compote
