~ Spirited Beef Stew with Cognac and Red Wine ~

For many days I’ve been saying that it’s Beef Bourguignon weather, so I finally stopped the talk and got cooking. I made this stew over the weekend, and the weather did not relent, gifting us with a deluge of rain worthy of an ark – and a cognac and wine infused beef stew. If you have to experience a torrent of rain, I dare say this kind of food makes it enjoyable – especially when accompanied by a creamy potato gratin, a robust bottle of Zinfandel wine, and a crackling fire.

Beef Stew with Cognac and Red Wine

Ideally start the stew a day ahead of serving. Not only does the flavor improve with time, it allows the fat to rise to the top as it cools. The next day, lift off the solidified fat from the surface before you reheat the stew. Serves 6.

Stew:
Extra-virgin olive oil
3 pounds beef chuck, cut into 1 1/2-inch chunks
Salt and freshly ground black pepper
1/2 cup cognac
2 large carrots, chopped
1 large onion, chopped
4 garlic cloves, chopped
1 (750-ml) bottle full-bodied red wine
1 cup beef or chicken stock
4 thyme sprigs
2 bay leaves
1 (6-ounce) can tomato paste
1 tablespoon brown sugar

Vegetables:
10 ounces pearl onions
1/2 pound cremini mushrooms, ends trimmed, halved if large
2 to 3 large carrots, peeled, cut on the diagonal 1/2-inch thick
Fresh thyme sprigs

1. Pre-heat the oven to 300°F. Heat 2 tablespoons oil in a large dutch oven or oven-proof pot with a lid over medium-high heat. Season the beef with salt and pepper. Working in batches, add the beef to the pan in one layer without overcrowding. Brown on all sides. Transfer to a plate and repeat until all of the beef is browned.
2. Add the cognac to the pot and deglaze, stirring up any brown bits. Reduce by half, then pour the cognac over the reserved beef.
3. Add 1 tablespoon oil, the carrots, onion, and garlic to the pot. Saute over medium heat until the vegetables begin to soften without browning, about 4 minutes. Return the beef and cognac to the pot. Add the wine, stock, thyme, bay leaves, and tomato paste. Bring to a boil, then turn off the heat, cover the pot aand transfer to oven. Bake in oven until the meat is very tender, stirring occasionally, 2 1/2 to 3 hours.
4. Strain the liquid from the stew into a saucepan. Separate the chunks of meat from the vegetables and return to the Dutch oven. Press down on the remaining vegetables in the sieve to extract as much juice into the drained liquid as possible. Discard the vegetables.
5. Boil the liquid until the sauce is reduced by about 1/3 and somewhat thickened. As the sauce boils, skim the fat from the surface (if you are making the stew one day in advance, you may skip this step since the fat will be removed after refrigeration). Stir in the sugar and season to taste with the salt and pepper. Pour the sauce over the beef. (At this point the stew may be made one day in advance. Cool, then cover and refrigerate overnight. One hour before serving, remove from refrigerator and proceed with recipe).
6. One hour before serving the stew, prepare the vegetables. Blanch the onions in a pot of boiling water for 1 minute; drain. When cool enough to handle, remove the skins; set aside. Heat 1 tablespoon olive oil in a skillet over medium heat. Add the mushrooms and saute until light golden, about 3 minutes. Lightly season with salt and pepper and transfer to a bowl. Steam or saute the carrots until bright in color and al dente. Transfer to the bowl with the mushrooms.
7. Skim any collected fat from the surface of the stew. Heat over medium-low heat on the cooktop to loosen the stew. Add the onions, mushrooms and carrots. Continue to cook over medium-low heat until stew and vegetables are hot. To serve, ladle the stew into warm bowls and garnish with fresh thyme.

If you don’t have a recipe like this in your weeknight repertoire, then you should – especially in the winter. We refer to it as Spaghetti Bolognese in our house, and before someone writes to inform me that this is not an authentic bolognese sauce, I’ll save you the time and announce it right here: This is not an authentic bolognese sauce – but it’s our version, and somewhere along the way it was assigned the name “bolognese” (probably my fault) and since then it’s stuck. More importantly, my entire family loves this sauce, and we’ve become quite attached to it’s name, so we’re are standing by it.

Since we are on the topic of authentic vs. unauthentic Bolognese, let me explain:

Bolognese sauce is a meat ragu, often containing 2 to 3 kinds of meat (beef, pork, veal). My sauce calls for ground beef since it’s most readily available in organic, sustainable form in all of the markets I shop. If you wish, feel free to add pork, pancetta or veal to the mix.

Bolognese is typically not a tomato-rich sauce. The meat is the principal component, which is why it’s a ragu. My version is generous with the tomatoes, because, well, we like tomatoes, and we are happy to call our sauce a sauce.

Bolognese spices are minimal: salt, pepper, bay leaf, nutmeg – and no garlic (gasp). You can be sure there will be garlic in my sauce, along with a handful of my garden’s herbs, such as oregano and thyme.

Bolognese includes white wine and milk – yes milk.  Neither are in this sauce  – otherwise, at least one young family member would have rebelled years ago due to a mystifying bias against dairy. Instead, I add red wine, because it deepens flavor and acidity to meaty sauces, and (for some reason) there’s always red wine in our house.

Finally, bolognese is a hearty ragu, often served with thick hearty-type pasta such as pappardelle. We love pappardelle, but, unlike red wine, there’s rarely pappardelle in our house, so spaghetti is the go-to staple of choice.

The point here is this is a flexible sauce that tastes great no matter it’s name or its origin. More importantly, it’s a family staple that’s hugely popular, may be prepared in large quantities, easily frozen, and is unfussy in its use: Ladle it over pasta, between lasagna sheets or even call it a base for chili. It may be prepared within an hour for easy weeknight dining, and promises to make your kitchen smell like home.

Spaghetti Bolognese

This recipe may be doubled. Freeze the extras for later use.
Serves 4  (or 1, if there is a 17 year-old boy at your table)

1 tablespoon extra-virgin olive oil, divided
1 pound ground beef
Salt
1 medium onion, finely chopped
1 small carrot, finely chopped
1/2 celery stalk, finely diced
1/2 sweet red pepper, finely chopped
2 large garlic cloves, minced
1/2 teaspoon crushed red pepper flakes
1/2 cup full-bodied red wine
1 28-ounce can Italian plum tomatoes with juice
1/4 cup tomato paste
1 bay leaf
1 teaspoons dried thyme
1 teaspoon dried oregano
1 teaspoon salt, or more to taste
1 teaspoon freshly ground black pepper
1 to 2 teaspoons sugar, to taste

1 pound pasta – cooked al dente
Grated Parmesan or Pecorino (they don’t do that in Bologna either) cheese

Heat 1 tablespoon olive oil in a large pot over medium-high heat. Add the beef, season with 1 teaspoon salt, and cook until nicely colored, 5 to 6 minutes, stirring often. Add the onion and continue to cook over medium heat until the onion is soft and translucent, 3 to 4 minutes more, stirring up any brown bits. Add the carrot, celery, red pepper, garlic, and red pepper flakes and cook until the vegetables soften and brighten in color, 3 to 4 minutes, stirring often. Pour in the wine and deglaze the pan, stirring up any brown bits. Add the tomatoes, tomato paste, bay leaf, thyme, oregano, black pepper, and 1 teaspoon salt. Bring to a simmer, partially cover the pot and continue to simmer for 30 to 40 minutes, stirring occasionally and breaking up any of the tomatoes with a wooden spoon. Taste for seasoning, and, if needed, add the sugar 1 teaspoon at a time to taste. Serve the sauce ladled over cooked pasta, such as spaghetti, pappardelle, rigatoni. Serve with grated cheese.

Lambs + Clams: A new contest and a recipe for Moroccan Spiced Lamb

I was delighted to be asked by the folks at The Charleston Wine and Food Festival to participate in a food blog event and contest called Lambs + Clams.  This event will promote the annual festival while celebrating the purveyors and farmers who supply their products to the Charleston region. Four monthly recipe contests will be held in the lead up to the festival which opens February 28, 2013. Each contest will spotlight either lamb, clams or oysters supplied by Craig Rogers of Border Springs Farm and Travis Croxton of Rappahannock River Oysters, both of whom provide their quality products to top chefs and restaurants all over the Eastern seaboard.

I am flattered and honored to be selected to compete with 7 talented food bloggers (listed below) from around the country in this event. By now you should know I love a good challenge, so I did not hesitate to accept. Let the games begin!

This month the contest kicks off with a challenge to create a recipe for a leg of lamb from Border Springs Farm. You can imagine how excited I was to receive my lamb – the anticipation felt like Christmas. It arrived in a BIG box, and I eagerly unpacked a gorgeous, glistening boneless leg of lamb weighing in at 5.4 pounds. Christmas came early this year.

I love to travel, and when I am not traveling, I bring my bucket list of destinations home to my kitchen for cooking inspiration. With that motivation, I decided to create a lamb recipe fragrant with the heat and spice of northern Africa and made a thick fiery marinade heady with Mediterranean spices, garlic, lemon and mint. One deep whiff made my fingers and toes tingle and transported me to Morocco, the sands of the sahara and an aromatic souk. It was all I could do to keep from slurping it up with a spoon.

I smeared and massaged the lamb with the marinade – yes, that’s right: massaging helps to work the spices into the meat. I could also just say “work the marinade into the meat with your fingers” but massage sounds so much nicer. Then came the hardest part – waiting. The longer the wait, the better. The lamb should marinate overnight, or even for 2 days if you can stand it. (When time is truly an issue, 8 hours will do, but overnight is best).

Once you’ve mastered the waiting part, the recipe is very easy to prepare, and the results are outstanding, yielding a succulent, exotically aromatic leg of lamb with a subtle kick of heat. To serve the lamb, I roasted an assortment of late summer vegetables (chinese eggplant, sweet peppers, onions and zucchini) with olive oil, garlic and salt and scattered them around the meat. There was plenty to share, so a few friends joined us as well,  and we all enjoyed this wonderful pre-Christmas gift of lamb.

Moroccan Spiced Lamb with Lemon, Mint and Yogurt

Ground cumin and coriander may be substituted for the seeds, however the flavor is best if you toast and grind your own seeds. Serves 6 to 8.

Marinade:
2 teaspoons whole cumin seeds
1 teaspoon whole coriander seeds
1/4 cup extra-virgin olive oil
1/4 cup freshly squeezed lemon juice
1/4 cup chopped fresh cilantro sprigs (or Italian parsley)
1/4 cup chopped fresh mint leaves
4 garlic cloves, minced
Zest from one lemon
1 tablespoon Sriracha or harissa
3 teaspoons kosher salt
2 teaspoons sweet paprika
1 teaspoon freshly ground black pepper
1 3-4 pound boned leg of lamb, butterflied

Yogurt Sauce:
1 1/2 cups Greek-style whole milk yogurt
1 large garlic clove, minced
2 tablespoons freshly squeezed lemon juice
1 tablespoon tahini
1 tablespoon extra-virgin olive oil
1 tablespoon finely chopped fresh mint
2 teaspoons Sriracha sauce, or to taste
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper

Prepare the marinade: Toast cumin and coriander seeds in a skillet over medium heat until fragrant, about 1 minute. Transfer to a mortar with pestle and grind to a fine powder. Transfer to a medium bowl. Add remaining marinade ingredients and whisk to blend. Make small incisions in the fat and meat of the lamb. Rub the marinade all over the lamb, massaging it into the meat and folds with your fingers. Place lamb in a rimmed baking dish. Cover tightly with plastic wrap and refrigerate overnight.

One hour before roasting, remove the lamb from the refrigerator and let stand at room temperature. If grilling, prepare the grill for direct and indirect cooking over medium heat. Grill the lamb for 10 minutes over direct heat to sear, skin-side down, turning once. Move to indirect heat and grill, covered, turning once or twice, until medium-rare (a meat thermometer inserted in thickest part will read 130 F), 20 to 30 minutes. If roasting, place lamb in a roasting pan. Roast in a preheated 425 F. oven, skin-side up, for about 30 minutes for medium-rare, turning once. Finish under a broiler, skin side up, for a few minutes to brown meat. Allow lamb to rest for 10 minutes, loosely covered with foil, before carving.

To make the yogurt sauce, whisk all of the ingredients together in a small bowl. Arrange the lamb on a serving platter. If you roasted vegetables, scatter them around the lamb. Garnish with fresh herbs. Serve with the yogurt sauce.

 

Sunday Supper: Braised Short Ribs and Sweet Potato Mash

Never mind that September is the “real” summer in San Francisco. As you may know, in the Bay area our summer months are characterized by mist and fog and accessorized with fleece. September and October are the glorious weather months, brandishing golden sunshine, warm days and air as soft as butter.

Even still.

Once school starts up and Labor Day is crossed off the calendar, I can’t help myself. I start fingering my woolies, eyeing the fireplace, and reaching for my Dutch-oven. Sundays become slow-food days, meant for braises, stews and roasts, accompanied by squidgy mashes and bubbling gratins, with the aroma of meat and spice wafting through the house. It may be warm outside in San Francisco, but the smells of fall are in the air – and in the kitchen.

Braised and Glazed Short Ribs
Serves 4 to 6

8 4-inch short ribs with bone, 3 1/2 – 4 pounds
Salt
Freshly ground black pepper
Olive oil
1 large onion, chopped
1 large carrot, peeled and chopped
1/2 medium daikon radish, peeled and chopped, about 1 cup
4 garlic cloves, chopped
2 teaspoons sweet paprika
2 teaspoons ground cumin
1 teaspoon ground coriander
1 teaspoon chipotle chili powder
1 750-ml. bottle full-bodied red wine
1 6-ounce can tomato paste
1/4 cup soy sauce

Heat oven to 325 F (170 C). Sprinkle the short ribs all over with salt and pepper. Heat 2 tablespoons oil in a Dutch oven or large heavy oven-proof pot with lid over medium-high heat. Brown the short ribs on all sides, in batches, without overcrowding the pan. Transfer short ribs to a plate. Pour off all but 1 tablespoon fat from the pot. Add onion, carrot, daikon and garlic. Sauté over medium-high heat, scraping up brown bits, until vegetables brighten in color and begin to soften, 2 to 3 minutes. Add paprika, cumin, coriander and chili powder. Sauté until fragrant, 1 minute. Add remaining ingredients, stirring to blend. Return short ribs to the pot, submerging in the wine. Bring to a boil, then reduce heat and simmer 2 to 3 minutes to allow the alcohol to burn off. Remove from heat and cover. Transfer pot to oven. Cook for 3 hours, or until meat is tender, stirring occasionally. Remove pot from oven and increase oven temperature to 425 F. Transfer short ribs to a roasting pan or baking dish. Bring sauce to a boil over medium-high heat. Cook until thickened and reduced by half, about 10 minutes. Brush the meat with the reduced sauce. Place roasting pan in oven and roast ribs until they are glazed and beginning to crisp, about 15 minutes. Serve with Sweet Potato Mash.

Chipotle Skirt Steak Fajitas

It’s August, but fall is in the air. There is a deep chill to the mornings, while the afternoon sunlight colors everything a hazy golden hue, stretching long shadows into the garden.  As if on cue, apples and pears have moved into prominent display in the markets, and school lunches are once again on our mind. The first week of school, with post-summer reunions, orientations, and a significant step into high school, has finished with success. The kids are happy; so then are the parents. I can’t think of a better excuse for a little down-home Margarita-Friday celebration, along with a fiesta-inspired dinner.

Chipotle Skirt Steak Fajitas
Serves 4

For the marinade:
3 garlic cloves, minced
2 chipotle peppers in adobo sauce, minced
1/4 cup olive oil
1/4 cup fresh lime juice
1/4 cup brown sugar
2 teaspoons salt
1 teaspoon ground cumin

1 1/2 pounds skirt steak

For the Avocado Corn Salsa:
1 15-ounce can black beans drained
Corn kernels from one ear of corn
2 scallions, white and green parts thinly sliced
1 small red bell pepper, stemmed and seeded, finely diced
Juice of one lime
2 tablespoons extra-virgin olive oil
1 teaspoon hot sauce, or to taste
1 teaspoon ground cumin
1 teaspoon salt
1 teaspoon freshly ground black pepper
1 ripe, but not too soft, avocado, cut in 1/4 inch chunks
1/4 cup chopped cilantro leaves

Soft corn or flour tortillas
Garnishes: tomato salsa, sour cream, fresh cilantro, fresh lime juice

Whisk all of the marinade ingredients together in a small bowl. Place skirt steak in a shallow rimmed dish (or a zip-lock bag). Pour the marinade over the steak. Cover with plastic and refrigerate, covered, at least 4 hours or overnight, turning once or twice.

To make the salsa, combine all of the ingredients except the avocado and cilantro in a bowl. Toss to combine. Taste for seasoning. (Salsa may be made in advance to this point. Cover and refrigerate). Before serving add avocado and cilantro. Gently toss to combine.

Remove steak from refrigerator 30 minutes before grilling. Discard marinade. Grill steak over direct high heat, turning once, until desired doneness, 4 to 6 minutes for medium-rare. (Or broil in oven, turning once). Transfer to cutting board and rest for 5 minutes. Cut against the grain in 1/2-inch strips.

To assemble fajitas, spoon Avocado Corn Salsa over a tortilla. Top with a few steak strips. Garnish with tomato salsa, sour cream, fresh cilantro and a squeeze of lime. Roll up and eat. Pass the napkins.

Spiced Meatballs with Cranberry Compote, Yogurt and Dill

It’s time to get fresh and meaty. I created this recipe for an upcoming class I am teaching at Cavallo Point in Sausalito, California on Scandinavian cooking. While traditional Scandinavian cooking may be heavy and meat focused (especially in the winter) it delightfully tips to an abundance of fresh produce in the warmer, brighter summer months. This recipe marries the Nordic climate extremes with a spin on the Swedish meatball, which is traditionally pan-fried and then napped with a warm cream sauce. These ground meat patties are transformed into fun finger food, freshened and brightened with tufts of parsley and dill. The heavy sauce is replaced by crisp lettuce leaves for wrapping  and a sweet-piquant cranberry compote and a dab of yogurt.  Continue reading Spiced Meatballs with Cranberry Compote

Warm Steak and Farro Salad with Roasted Beets, Onions and Chickpeas

It’s safe to say that everything I bought today at the market ended up in this dish. Sweet onions, golden beets and fresh chickpeas vied for my attention this morning at the farmers’ market, so I did what any sensible person would do. I bought all of them. Moving on to the local ranch’s stall displaying their glistening meat, I  continued my spree and snagged 2 seriously soft and richly marbled rib eye steaks, each weighing in at nearly 1 pound each. I wasn’t sure exactly how I would put our dinner together, but I knew it would be magnificent with these fresh and earthy ingredients.

Warm Steak and Farro Salad with Roasted Beets, Onions and Chickpeas
Serves 4

3 medium golden beets, peeled, cut in 1/2 inch batons or wedges
1 large sweet yellow onion, halved lengthwise, each half thickly sliced in wedges
Extra-virgin olive oil
Salt
Freshly ground black pepper
2 1/4 cups chicken stock
1 1/2 cups farro
1 small garlic clove, minced
1 teaspoon paprika
1 teaspoon cumin
1/4 teaspoon cayenne, or to taste
2 or 3 rib eye steaks, about 1 inch thick
1/2 cup shelled fresh chick peas
1/4 cup fresh tarragon leaves
Sriracha (optional)

Preheat oven to 375 F/190 C. Toss the beets and onion with 1 tablespoon olive oil. Season with salt and pepper. Bake in oven until beets are tender and onions are beginning to brown, about 45 minutes.
While the vegetables are roasting, prepare the farro: Combine the stock, farro and 1 teaspoon salt in a medium saucepan. Bring to a boil, then reduce heat to a simmer. Cover and cook until the farro is tender but still chewy, about 30 minutes. Remove from heat and fluff with a fork. Stir in 1 tablespoon olive oil,  garlic, paprika, cumin and cayenne. Partially cover to keep warm.
Prepare the steaks: Season the steaks all over with salt and pepper. Heat 1 tablespoon olive oil and 1 tablespoon butter in a heavy skillet or cast iron skillet over medium high heat. Add steaks, without overcrowding, and cook until brown on both sides, turning once, 6 to 8 minutes for medium rare. Transfer to a cutting board and let rest 5 minutes. Cut steaks crosswise in 1/2 inch thick slices.
While the steaks are resting, add the fresh chickpeas to the skillet and briefly saute over medium heat until their color brightens, 1 to 2 minutes.
To serve, spoon the farro into the center of a serving platter or divide among serving plates. Arrange steak in the center of the farro and drizzle with any accumulated juices. Place the vegetables around the steak and drizzle with any accumulated baking juices. Scatter the chickpeas over. Garnish with fresh tarragon. If desired drizzle with more olive oil. Serve warm with Sriracha sauce on the side.

Irish Beef Stew

I admit that I usually don’t get all hyped up about St. Patrick’s Day, but I do get excited about unique ingredients for cooking. So, as promised, here is the second post inspired by a bottle of Guinness Stout (that we somehow managed not to drink this week) which is a wonderful excuse to cook an Irish-themed meal for St. Patrick’s Day. Irish Beef Stew with Guinness is a no-nonsense kind of stew that you would expect from your mother or grandmother. Fortified with stout beer and sturdy root vegetables, this hearty no-frills stew will warm and comfort you – just like a woolen fleece on a misty grey day.

Irish Beef Stew

As most stews go, this is a humble and forgiving recipe. Add your favorite root vegetables and serve with mashed potatoes. Serves 6.

3 tablespoons olive oil, divided
3 pounds beef chuck, excess fat trimmed, cut into 1 1/2-inch pieces
Salt
Freshly ground black pepper
4 cloves garlic, chopped
1/3 cup tomato paste
2 cups beef stock
1 1/2 cups stout beer
2 teaspoons dried thyme
2 bay leaves
2 to 3 large carrots, sliced 1/4-inch thick
1 large yellow onion, cut into 1-inch pieces
1 medium rutabaga, cut into 3/4-inch pieces
1 medium parsnip, cut into 3/4-inch pieces

1. Preheat the oven to 325 F. (170 C.) Heat 2 tablespoons oil over medium-high heat in a Dutch oven or ovenproof pot with a lid. Season the beef all over with salt and pepper. Brown the beef in batches, without overcrowding, 6 to 8 minutes, turning as needed. Transfer the meat to a plate and repeat with the remaining beef.
2. Add the garlic to the same pot and sauté until fragrant, about 1 minute. Add the tomato paste and cook, stirring constantly, 1 minute. Return all of the beef to the pot and stir to coat. Add the stock, beer, thyme, bay leaves, 1 teaspoon salt, and 1/2 teaspoon black pepper. The meat should be just covered with liquid. If not, add additional stock or beer to cover. Bring the liquid to a boil, then turn off the heat and cover the pot. Transfer the pot to the oven and cook until meat the is tender, about 2 hours.
3. While the meat is cooking, heat 1 tablespoon olive oil in a deep skillet or large pot over medium heat. Add the carrots, onion, rutabaga, and parsnip and lightly season with salt. Saute the vegetables until they brighten in color and begin to take on a golden hue, 2 to 3 minutes.
4. Remove the stew from the oven and skim any fat on the surface of the liquid with a spoon. Stir in the vegetables and return the pot to the oven, uncovered. Cook, stirring once or twice, until the sauce is slightly reduced, the vegetables are tender, and the meat is fork-tender, about 1 hour. Remove the stew from the oven and taste for seasoning. Serve hot with mashed potatoes.

It’s been over a year since I started to post homemade charcuterie on TasteFood. One of my favorite recipes – and easiest – is the home-cured pork belly, aka bacon, which I continue to do on a regular basis. I am here to say, that you – any of you – can do this too, and that once you try it, there will be no going back. Not only are the results positively swoon-worthy, the process is ridiculously simple. Home-Cured Pork Belly

Five pounds sounds like a lot of meat, but the bacon is easy to freeze and a welcome gift for your bacon-loving friends. Recipe adapted from Saveur Magazine.

5 pounds pork belly with skin
1/3 cup kosher salt
1/4 cup granulated sugar
2 tablespoons black peppercorns
3 bay leaves
2 garlic cloves, chopped

Rinse the pork and dry. Lay on a large sheet of parchment paper. Combine salt, sugar, peppercorns and bay leaves in a mortar or spice grinder. Coarsely pound or grind. Mix in the garlic. Smear the spices all over the pork. Transfer to a large resealable plastic bag, turning to distribute the spices. Place on a rimmed baking tray and refrigerate for 7 days, flipping the bag every second day.
After 7 days the pork should feel firm to the touch. (If not, refrigerate an additional day and check again). Remove the bacon from the bag and thoroughly rinse under cold water. Pat dry with paper towels.
Heat oven to 200 F. Place bacon in a rectangular baking pan and roast until the meat is brown and an instant read thermometer inserted in the center reads 150 F., about 3 hours.
Transfer the bacon to a cutting board. Slice off the skin with a long, thin knife. Cool to room temperature, then transfer to refrigerator. Cut in portions and wrap in plastic. Bacon will keep in refrigerator for up to 10 days or freeze for up to 3 months.

See? Easy to make. All that you need is time to plan ahead for a week of letting the meat brine in the refrigerator. Admittedly, we don’t always have time for such a project, and when a go-to specialty product comes across my radar for easy use, I am interested. So it felt a bit like Christmas when I recently received a box from Alexian Pate and Specialty Meats filled with an assortment of pates, rillette and terrines.  On the heels of a year of Charcutepalooza posts on TasteFood, it must have been evident that I love charcuterie. When Alexian reached out to me and asked if I would like to try a sample selection of their all-natural delicacies, it was hard for me to resist.

As most of you know, I rarely do product reviews. It’s not so much out of principle, but more that I rarely come across products which genuinely excite me. Call me picky, I prefer my products authentic and my ingredients to be fresh and natural – especially when it comes to meat. So, Alexian caught my attention. Their charcuterie are all-natural, with no chemical preservatives, fillers, additives and colors, and their meats are free of antibiotics and growth stimulants. They are a family run business, and “A Certified Woman Owned Business Enterprise” to boot, with their traditions dating back to Germany’s 17th century. With that resume, I was quite impressed and eager to taste a sampling of their specialties.

When the box arrived, it indeed felt like Christmas.  We have happily indulged in Duck Liver Mousse with Cognac, a rustic and hearty Pheasant Rosemary Pate, unctuous award winning Duck Rillettes, and a silky Truffled Mousse flecked with mushrooms and laced with sherry.

The flavors of the products reflected the company philosophy. They were fresh with a clean taste of meat and no lingering gaminess. The Truffled Mousse was the family favorite, smooth, creamy and delicately perfumed with truffle. Each package came with a shelf life of at least 56 days, enabling us to savor and enjoy each item over several weeks, pulling them out for an easy rustic dinner of cheese and pate or as an appetizer while entertaining. I will continue to make my own charcuterie when I want a project. When I want a go-to specialty meat product I won’t hesitate to buy Alexian.

Lamb Stew with Raisins and Honey

It’s the time of year when I have an urge to travel. Call it cabin fever, restlessness, or simply the craving to be somewhere different, where it’s warm, spicy and balmy. The sights, smells and sounds of new cultures are revitalizing. Time slows down, and the smallest details are observed and savored  amidst a kaleidescope of impressions. It just so happens that this is also the time of year when my urge to travel collides with real life. It’s the middle of the school year, I have work deadlines, and the contents of my piggy bank were spent at Christmas. So I improvise, and my travels occur in the kitchen, where I replace my passport with the jars in my spice drawer and concoct recipes inspired by the exotic flavors, heat and aromas of far flung destinations.

This lamb stew takes inspiration from a traditional Moroccan meat and vegetable tagine and Mrouzia, a rich celebratory stew prepared in the days following  Eid Al Kebir  – or the Festival of Sacrifice. It’s meant to be sweet, enhanced with dried fruit and honey, but I have scaled the sweetness back to my taste while adding tomato paste and carrots for more freshness.  The spice list is lengthy, but attainable. It’s a compilation of spices similar to those found in Ras El Hanout, a spice blend that is a staple in North African cuisine.

Lamb Tagine with Raisins and Honey
Serves 4

1 tablespoon paprika
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon ground cinnamon
1 teaspoon freshly ground black pepper
1/2 teaspoon ground ginger
1/2 teaspoon cardamom
1/4 teaspoon nutmeg
1/4 teaspoon cloves
1/4 teaspoon cayenne
Salt
2 pounds lamb leg or shoulder, excess fat trimmed, cut in 1 inch chunks
3 tablespoons olive oil, divided
1 large onion, chopped
3 cloves garlic, minced
1 tablespoon freshly grated ginger with juice
2 cups chicken stock
1/4 cup tomato paste
2 carrots, cut in 1/4 inch slices
1 cup golden raisins
1 tablespoon honey, or to taste

Combine all of the dried spices and 1 teaspoon salt together in a small bowl. Toss the lamb with 2 tablespoons olive oil in another bowl. Add the spices to the lamb; mix to thoroughly coat. Cover and refrigerate at least 4 hours and up to 24 hours.
Heat 1 tablespoon olive oil in a dutch oven or large pot with a lid. Add lamb in one layer in batches, without overcrowding. Brown on all sides. Transfer to a plate. Add onion, garlic and ginger to the same pot. Saute until fragrant and onion begins to soften, 2 minutes. Return lamb with any collected juices to the pot. Add chicken stock, tomato paste and 1 teaspoon salt. Add more stock, if necessary, to cover the lamb.
Bring to a boil; reduce heat to a simmer. Cover and cook, stirring occasionally, until lamb is very tender, about 2 hours.
When lamb is tender, add carrots and raisins. Simmer, uncovered, until sauce reduces and thickens to a thick stew consistency and the carrots are tender, about 30  minutes.  Stir in honey. Taste for seasoning. Serve warm, spooned over couscous.
