Momofuku Bo Ssam – Lacquered Pork in Lettuce Leaves

Slow-Roasted Pork Wrapped in Lettuce with Ginger, Scallions and Red Chilies 

Normally I can’t resist tweaking a recipe, but not this time. As soon as I read this article and recipe in the New York Times for Momofuku Bo Ssam, I began to plan my week around making it. Adapted from the Momofuku cookbook by David Chang and Peter Meehan, this Korean-inspired recipe has perfection written all over it. Despite its exotic name with a restaurant pedigree, I might call this dish Lacquered Slow-Roasted Pork. The meat alone is a masterpiece, oven-roasted to a crispy, caramelized heap with nothing more than copious amounts of sugar and salt. It’s then wrapped in lettuce (ssam), brightened with an intoxicating muddle of ginger and scallions and thoroughly electrified with a fermented bean and chili sauce which will rock any Scoville Scale.

In this recipe, the method and ingredients are slightly modified from the original recipe.

Bo Ssam: Slow-Roasted Lacquered Pork with Ginger, Scallions and Chile Sauce

Makes 6 to 8 servings.

4 pounds pork butt (shoulder)
1/2 cup granulated sugar
1/2 cup kosher salt, plus extra for sprinkling
1/4 cup light brown sugar

Ginger-scallion sauce:
1 bunch scallions, about 8, white and green parts, thinly sliced
1/4 cup freshly grated ginger
2 tablespoons grapeseed oil
1 teaspoon light soy sauce
1/2 teaspoon sherry vinegar
1/4 teaspoon kosher salt

Red chili sauce:
1 tablespoon fermented bean and chili paste
1 teaspoon sweet chili sauce
2 tablespoons sherry vinegar
2 tablespoons grapeseed oil

For serving:
Cooked basmati rice
Butter lettuce leaves or little gem leaves
Optional: Fresh cilantro sprigs, toasted sesame seeds, and/or minced red chile pepper for garnish

Method:

1. Place the pork in a large bowl. Combine the granulated sugar and 1/2 cup salt in a small bowl. Rub all over the meat. Cover with plastic wrap and refrigerate overnight.

2. When you are ready to cook, remove the pork from the oven, discard any accumulated juices, and let stand at room temperature for 30 minutes.

3. Heat the oven (or a grill) to 300°F.

4. Place the pork in a roasting pan. Roast in the oven (or over indirect heat on the grill) until the pork is falling-apart tender, about 4 hours, turning and basting occasionally.

5. While the meat is roasting, prepare the ginger-scallion sauce and red chili sauce. Combine all of the ingredients for the ginger-scallion sauce together in a bowl. Taste for seasoning and set aside. Combine all of the ingredients for the red chili sauce together in a bowl. Set aside.

6. Remove the meat from the oven and transfer to a cutting board. Pour off and reserve the accumulated fat and juices.

7. Increase the oven (or grill) temperature to 500°F.

8. Shred the pork, and return to the roasting pan. Drizzle with some of the reserved fat to lightly coat and moisten the meat. Sprinkle the brown sugar over the pork and return to the oven or over indirect heat on the grill. Roast until the meat begins to crisp and caramelize in parts, 8 to 10 minutes. Transfer the meat to a serving platter.

9. To serve, place a spoonful of cooked basmati rice in the center of a lettuce leaf. Top with the pork, the ginger-scallion sauce, and a drizzle of red chili sauce.

10. Optional: Garnish with fresh cilantro sprigs, toasted sesame seeds, and/or minced red chile pepper.

Charucutepalooza #11: The Cure – Air Dried Pork Tenderloin

I knew the mini-bar had a purpose. There is a funky mini-bar downstairs in our home which serves no use except to take up space – that is until now. This month’s Charcutepalooza challenge is curing (which is another way of saying hanging and drying) a whole piece of meat. The trick is to hang the meat in an environment which maintains a steady temperature and humidity level. The professionals might use a curing chamber which will do all of this in a sleek, shiny, high tech manner. For us newbies we must rely on a basement, garage, wine cellar, and lots of faith tempered with caution. Of course, it would be helpful if we actually had a basement or wine cellar, or that the mild California climate would guarantee a steady cool temperature.

Enter the mini-bar fridge, which sits quietly forgotten, occasionally stocked with an overflow of party beverages, but usually empty. After reading a post by Michael Ruhlman, I realized that this appliance associated with my college dorm room could, in fact, house my meat. All I had to do was clean it and turn it to its warmest setting, and suddenly our clunky relic from the previous owner’s jacuzzi parties morphed into a handy dandy meat curing chamber.

Since I had no idea how any of this would turn out, and mindful that I might possibly produce results that could sicken my family, I decided to keep it very simple and cured two pork tenderloins. The process took all of 3 weeks, with no hands on attention except to remember to check it. My husband gamely offered to taste the finished results, and loved them, affirming – once again – that Charcutepalooza is making him one happy meat eating camper.

The meat is delicious to eat as is, but I also love to add dried ham to pizzas, pasta, eggs and salads. It’s salty, chewy texture gives just the right oomph to this winter spinach salad.

Wilted Spinach Salad with Warm Balsamic Vinaigrette, Toasted Pinenuts and Cured Pork

The warm balsamic dressing will lightly wilt the spinach greens as they are tossed. If you don’t have any air dried pork, oven dried prosciutto is an excellent and easily accessible alternative. Serves 4-6.

3/4 pound baby spinach, washed and dried
1 large shallot, thinly sliced
1 garlic clove, slightly smashed
1/3 cup balsamic vinegar
1 teaspoon sugar
2 teaspoons fresh lemon juice
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/2 cup extra virgin olive oil
1/2 cup cured pork or oven dried prosciutto (see below), broken in pieces
1/4 cup pine nuts, lightly toasted

Place spinach and shallot in a large bowl. Combine garlic, vinegar and sugar in a small saucepan over medium heat. Bring to a boil then reduce to a simmer. Cook until vinegar is reduced by half. Remove from heat and stir in lemon juice, salt and pepper. Slowly add oil in a steady stream, whisking constantly to emulsify. Remove and discard garlic clove. Pour half of the warm dressing over the spinach. Toss to combine. Add more dressing to taste. Divide salad among individual plates. Scatter pork and pine nuts over the salad. Serve immediately.

To oven dry prosciutto:
Preheat oven to 350 F. Place 8 slices of prosciutto on a baking tray in one layer. Bake in oven 15 minutes. Turn off oven; do not remove prosciutto. Let it sit in oven 15 more minutes. Remove and break into shards.

Pork (or Boar) Stew with Prunes and Armagnac

I prepared this stew with boar meat, because boar reminds me of autumn in Europe when it’s the season of la chasse – or hunting season.  Like most game, boar is lean and has a slightly gamey flavor. It benefits from slow cooking and pairs well with powerful aromatics such as juniper, winter fruit and spirits, such as Calvados and Armagnac. If you cannot find boar meat, pork is a good substitute.

Pork (or Boar) Stew with Prunes and Armagnac

Serves 6

20 prunes, pitted
3/4 cup Armagnac brandy
3 pounds pork or boar shoulder, excess fat trimmed, meat cut into 2-inch chunks
Salt
Freshly ground black pepper
2 tablespoons olive oil
4 ounces bacon, coarsely chopped
2 large carrots, chopped
1 large yellow onion, chopped
3 garlic cloves, chopped
1 bottle full-bodied red wine
2 bay leaves
1 bouquet garni: 4 juniper berries, 3 rosemary sprigs, 2 thyme sprigs, and a handful of parsley leaves wrapped in cheesecloth and tied with a kitchen string

1. Combine the prunes and Armagnac in a bowl and let stand at least 1 hour.
2. Preheat the oven to 325°F.
3. Season the pork on all sides with salt and pepper. Heat the olive oil over medium-high heat in a Dutch oven or oven-proof pot with a lid. Add the pork in batches, without overcrowding, and brown on all sides. Transfer to a bowl and repeat with the remaining pork.
4. Pour off all but 1 tablespoon pork fat from the pan. Add the bacon and sauté until its fat renders. Add the carrots and onion and sauté until the onions soften and the carrots are crisp tender, 4 to 5 minutes. Add the garlic and sauté until fragrant, about 1 minute. Return the pork and any accumulated juices to the pan. Add the prunes and Armagnac, the wine, bay leaves, bouquet garni, 1 teaspoon salt, and 1 teaspoon black pepper. Bring to a boil, then reduce the heat to a simmer, cover the pan, and transfer to the oven. Cook until the meat is very tender, 2 1/2 to 3 hours.
5. Remove the stew from the oven, discard the bay leaves and bouquet garni, and taste for seasoning. Serve warm with mashed potatoes or polenta.
(The stew may be prepared up to two days in advance. Warm over low heat or in a 300 F. oven before serving.)

Pork Rillettes with Calvados 

These little pots of meaty goodness promise to make right in the world. Rillettes are potted jars and terrines of meat confit, slow cooked in fat, shredded and packed in more fat. Rustic, unctuous and oh-so-rich, a little dab goes a long way. Which is why the process of making rillettes is called “stretching,” which is this month’s Charcutepalooza challenge.

Stretching is an economical and sparing way of making meat last – using all of the last bits and preserving them for later use. It’s a method steeped in conservation and frugality, yet its results are rich and luxurious. It’s the paradox of French country cooking, and it’s why I love it.

Duck, goose and pork are traditional proteins for rillettes. I chose pork and adapted a recipe from WrightFood where the pork is spiced and marinated overnight in Calvados, then slowly cooked in duck fat. Need I say more?

I like to accompany rillettes with fruit chutney. The sweet piquancy of chutney adds a fresh balance to the rich meat. Chutneys are flexible and forgiving. Use a mix of fresh and dried fruit, combined with an acid, such as vinegar or citrus. Sweet and savory with a kick, chutneys are perfect accompaniments to meat and poultry.

Apple Prune Chutney
Makes about 2 cups

1 tablespoon olive oil
2 large Granny Smith apples, peeled, cored, cut in 1/4 inch dice
1 large shallot, chopped, about 1/4 cup
1/2 cup coarsely chopped pitted prunes
1/3 cup currants or raisins
1/2 cup apple cider vinegar
1/3 cup Armagnac
2 tablespoons brown sugar
1 teaspoon ground coriander
1/2 teaspoon finely ground juniper berries
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper

Heat oil in a saucepan over medium heat. Add apples and shallot. Sauté until beginning to soften without browning, 2 minutes. Add remaining ingredients. Bring to a boil. Reduce heat to low and simmer uncovered until liquid has nearly evaporated, about 15 minutes. Remove from heat and cool to room temperature. Cover and refrigerate until use. May be made up to 2 days in advance. (Flavors will develop with time.)

Ode to Fall: Pappardelle with Pork Ragù

I am going to ignore that it is 90 degrees outside. It’s fall after all. For those of you who know me, it’s that time of year when I have a little rant about missing New England weather. September is the time when the air puts on a chill just like a wooly cloak, the sun lowers seductively in the horizon, winking and casting its golden light while the aroma of turning leaves fills the air. I know I shouldn’t complain while I don my sunglasses and smear on more sunscreen, but I do. As I walk about the house in shorts and flip flops, I like to pretend that I am still in northern Europe or Boston, switching out my tank tops for fluffy fleece and packing tissues in my pocket to stop a runny nose. I might need a fan right now, but I can also indulge in warming fall comfort food.

Pappardelle with Pork Ragù

If you can stand it, refrigerate the ragù overnight before serving to allow the flavors to develop. This recipe will make enough ragù to serve a family of four with enough leftover to freeze for a second meal.

2 pounds pork butt, excess fat trimmed, cut in 2 inch chunks
Salt
Freshly ground black pepper
2 tablespoons olive oil
1 large yellow onion, chopped
2 carrots, finely diced
6 cloves garlic
1 teaspoon red pepper flakes
1 cup dry white wine
2 (28 ounce) cans Italian plum tomatoes with juice
2 bay leaves
2 teaspoons dried oregano
1 teaspoon dried thyme
1/2 teaspoon ground cinnamon

1 pound pappardelle pasta, cooked until al dente
Grated Pecorino Romano cheese

Salt and pepper the pork. Heat olive oil in a large pot or dutch oven over medium-high heat until it’s shimmering. Add pork in one layer in batches, without overcrowding. Brown on all sides; transfer to a plate. Repeat with remaining pork. Pour off all but 2 tablespoons fat. Add onion, carrots, garlic and red pepper flakes. Sauté until the vegetables begin to soften, about 3 minutes. Carefully add wine (it may spatter.) Cook, stirring up the brown bits and to burn off the alcohol, about 1 minute. Add tomatoes, bay leaves, oregano, thyme, cinnamon, 1 teaspoon salt and pepper. Return pork to the pot and submerge in the sauce. Simmer, covered, over low heat until pork is very tender, about 2 hours. Remove lid and continue to simmer, skimming fat occasionally with a spoon, until sauce is thickened, 45 minutes. Add salt and pepper to taste. Serve over cooked pappardelle with grated Pecorino Romano cheese.

Any excuse I have to make pâté is a gift, so this month’s Charcutepalooza challenge (packing) was a bit like an early Christmas. In charcuterie terms, packing involves jamming a terrine with ground spiced meat, spirits, eggs and cream and baking it in a water bath.  The resulting baked brick of spiced and fortified meat is weighted down and banished to the refrigerator to sit for a day or two to become comfortable with it’s brash flavorings while anticipation builds –  just as it would the day before Christmas as you eye unopened presents placed beneath the tree. When the time is right (2 days at least) the terrine is retrieved from the refrigerator and its wrapping discarded, uncovering a rich, meaty country pâté, chunky with nuts and fruit.

I have fiddled with this recipe over the years, and lately become enamored of wild boar. Boar reminds me of Europe, where it is a frequent ingredient in charcuterie. It may be purchased in specialty stores, through a butcher or mail order. Boar is a flavorful meat, kind of a cross between pork and lamb, that lends depth to the pâté. Since it’s so lean, it’s important to combine it with a fattier cut of meat such as pork shoulder.

Country Pâté with Boar, Cranberries and Pistachios

This pâté is a perfect appetizer or easy dinner with cheese and salad. Begin at least two days before serving to allow the flavors to develop. (Veal may be substituted for the boar.)

Serves 20

1 pound ground boar shoulder (or veal)
1 pound ground pork shoulder
3 garlic cloves, minced
2 teaspoons salt
2 teaspoons coarsely ground black pepper
2 teaspoons dried thyme
1 teaspoon allspice
1 teaspoon ground coriander
½ teaspoon ground cloves
3/4 pound bacon, coarsely chopped
2 tablespoons unsalted butter plus extra for greasing terrine
1 medium yellow onion, finely chopped
2 eggs, lightly beaten
1/3 cup heavy cream
1/3 cup Calvados
1/4 cup shelled pistachios
1/4 cup dried cranberries
Coarsely ground peppercorns for garnish

If you are grinding your own meat, then cut the boar and pork in 3/4 inch cubes. Place in a large bowl. Add garlic, salt, pepper, thyme, allspice, coriander and cloves. Mix to thoroughly coat the meat. Cover and refrigerate 6 hours or overnight. Grind with a meat grinder before proceeding.

If you are using ground meat, combine boar and pork in a large bowl. Add garlic, salt, pepper, thyme, allspice, coriander and cloves. Mix thoroughly; refrigerate up to 24 hours.

Preheat oven to 350 F. (180 C.) Remove meat from refrigerator. Add bacon and return to refrigerator while you prepare the onions. Melt 2 tablespoons butter in a skillet over medium heat. Add onion and sauté until translucent but not brown, 6 minutes. Cool to room temperature. Stir into the meat.
Combine eggs, cream and calvados in a small bowl. Add to meat and mix well.
Butter a loaf pan or terrine. Press one third of the meat into the terrine. Sprinkle evenly with half of the pistachios and cranberries. Press another third of the meat into the terrine. Top with remaining pistachios and cranberries. Cover with remaining meat. Cover terrine tightly with foil. Prick 2-3 holes in the foil. Place terrine in a baking pan. Pour boiling water into the baking pan until halfway up the sides of the terrine. Bake in oven until meat thermometer inserted in the center reads 155 F. about 1 1/2 hours. Remove from oven and remove terrine from the water bath. Place a terrine press over the pate (or a cutting board with cans on top) and cool completely. Transfer to refrigerator and let sit 1-2 days before serving. To serve, un-mold pate. Scrape off any congealed fat. Cut in slices, ½ inch thick. Sprinkle with additional peppercorns if desired. Serve with cornichons, Dijon-style mustard and fresh French baguette or peasant bread.

This month’s Charcutepalooza challenge had the whiff of Oktoberfest. Not only were we asked to make and stuff more sausages, we were asked to blend and emulsify the meat filling to a consistency found in a hot dog, bratwurst or weisswurst. I chose the bratwurst, partly for it’s happy collaboration with beer and partly for its relative ease compared to the hotdog. Baby steps, please!

As I embarked on this challenge over the July 4th weekend, I envisioned dirndls, sauerkraut and good strong mustard in my future. Somehow a trip to Europe has eluded us this summer, but, by golly, if we can’t make it back for a visit, then I will bring Europe home to my California kitchen. I spent the better part of a day on  this challenge, which provided much thoughtful time to reflect on how I would title this post. Here are a few of the contenders:

How to make a Danish family happy:
Yes, my husband is Danish and bratwurst is German. At the end of the day, they share a border, and, while their history may have been a tad testy, these 2 countries also share a culinary love for sausages. In Denmark, sausage is the fast food of choice, with carts distributed wherever people roam. While I may be hunting down a cup of coffee upon international arrival from the U.S., my husband will sidle up to the nearest airport sausage cart with both of our kids in tow, and order a flight of pølse with mustard, bacon and crispy onions. Apparently his gene pool is the strongest.

How to train a terrier:
Or, more specifically, the unflinching interest my dog is showing in me while making bratwurst is unsettling. I have never succeeded in getting our terrier to consistently obey me. Now I know how.

Why a power hose should be our next new kitchen gadget:
Sausage, sausage everywhere…on the counters, on the floor, in the sink, in the bowls, in the mixer, in the grinder, in my hair, under my nails, on my clothes and countless kitchen towels.  And did I mention that my dog is intently staring at me?

The difference between white pepper and black pepper: 
White pepper is traditionally used in dishes that should not show dark flecks of black pepper. But visuals are not the only difference. White pepper has a potent spiced flavor which, in large amounts, I don’t care for. Too bad I only figured that out after I added a heaping spoonful to the filling.

Familiarity breeds contempt:
I am 6 hours into the meat stuffing process, which includes handling, chopping, chilling, grinding, chilling, mixing, frying, tasting, chilling, stuffing, chilling, poaching, frying and tasting ground, blended meat. I think I’ll tuck these babies away in the freezer and take a time out.  Then I can rename this title to: Absence makes the heart grow fonder.

I could be watching Wimbledon and sipping Pimms right now:
But, no, I am blending and stuffing bratwurst in the company of my dog. Pass the sauerkraut and a beer, please.

Mustard makes everything taste better:
Especially when everything involves sausage. Truth be told, these were quite tasty, and my family gobbled them up (see title #1). I pan-fried the bratwurst and served them with thick slices of country-style bread, mustard and sauerkraut. As we ate the bratwurst, we watched Wimbledon highlights and enjoyed an ice cold Danish beer. The EU is alive and strong in Northern California.

Homemade Beer Mustard

Begin the mustard at least two days before serving. Makes 1/2 cup. (Recipe may be doubled.)

1/4 cup yellow mustard seeds
1/4 cup apple cider vinegar
1/4 cup dark beer
1 tablespoon dried mustard
1 tablespoon packed brown sugar
1 teaspoon kosher salt
1/4 teaspoon turmeric
1/8 teaspoon ground cloves

Combine mustard seeds, vinegar and beer together in a non-reactive bowl. Cover and refrigerate overnight.
Transfer mustard and liquid to a small saucepan. Bring to a boil; immediately remove from heat. Cool to room temperature. Transfer to a food processor or blender. Add remaining ingredients and purée. Transfer to a glass jar or container and refrigerate overnight. Mustard may be stored in refrigerator for up to two weeks.

The Challenge: Homemade Italian Sausage

Should you choose to accept this Challenge, you must be prepared to traverse the county, futilely cold call farmer’s market purveyors, and face rejection at multiple Whole Foods stores and independent markets in search of the elusive casing a.k.a. pig intestines – or the sacred vessel that contains the cherished meat in the form of a sausage.

Should you choose to accept this Challenge, you shall be prepared to pay dearly for said casing when located, because either:

  • The local supermarket is flummoxed when it comes to charging for an empty casing, and, at the risk of compromising highly sensitive payment technologies, will charge you the price of a whole sausage. Yes, that’s right: You will be required to pay for a sausage without meat.
  • You belatedly order from the stalwart Charcutepalooza ally, D’Artagnan, thereby assuming full responsibility (and overnight shipping charges) due to your procrastination, in order to avert a last minute crisis and Charcutepalooza meltdown.
  • Or you flee your suburban confines for the lure and anonymity of the big city  – and the Ferry Building – which entails paying bridge tolls, parking fees, and extraneous charges in the form of lunch and shopping. (Hey, it’s the Ferry Building.)

If you succeed in obtaining the elusive casing you will be jubilant and nearly home free, until you unpack your brand new meat grinder and sausage stuffer and realize you must decipher a cryptic code to correctly assemble the tools to achieve your desired results. Your trusted assistant, a.k.a. spouse, will selflessly risk life, limb and marital conflict, while cautiously advising you on all matters of RTM (that’s code for Reading The Manual). You will soldier on and prevail, sausages and marriage in tact, another Chaructepalooza challenge met with glorious and grillable results.

Given the amount of effort required to find the sausage casing, it’s not without irony that many recipes including sausage in pasta or on pizza, recommend discarding the casings and crumbling the meat. Well, rest assured, this recipe requires no such thing.

Italian Sausage and Broccolini Pasta with Basil
Serves 4 

1 pound pasta, such as orecchiette, penne, pipette rigate
Extra-virgin olive oil
3/4 pound spicy Italian sausage links (see below)
2 garlic cloves, minced
1/2 teaspoon crushed red pepper flakes, or to taste
3/4 pound broccolini, cut in 1 inch pieces
1 (28-ounce) can Italian plum tomatoes with juice
Salt and freshly ground black pepper
1/2 cup basil leaves, torn in half, plus extra for garnish
1/3 cup finely grated Pecorino Romano cheese, plus extra for garnish

Bring a large pot of salted water to a boil. Add pasta and cook until al dente; drain. While the pasta is cooking, heat 1 tablespoon olive oil in a skillet over medium-high heat. Add sausages and brown on all sides. Remove from pan and transfer to a cutting board. When cool enough to handle, slice in 1/4 inch pieces.
Add 1 tablespoon olive oil to the same skillet and heat over medium heat. Add garlic and red pepper flakes. Sauté until fragrant, 1 minute. Add broccolini and continue to sauté until bright green but still crisp, 1 minute. Add tomatoes, salt and pepper. Simmer 3-4 minutes, breaking tomatoes apart with a spoon. Add pasta and sausages to the skillet. Toss to combine and thoroughly heat through. Remove from heat and stir in basil leaves and cheese. Serve immediately garnished with extra cheese and basil.

Homemade Italian Sausage
Makes about 3 1/2 pounds sausage, or 12 links

I followed Hank Shaw’s sausage making technique in this post from Simply Recipes  and used these ingredients  for the filling:

3 pounds pork shoulder
1/2 pound pork fat
4 garlic cloves, peeled and chopped
2 tablespoons paprika
1 tablespoon salt
1 tablespoon freshly ground black pepper
2 teaspoons dried oregano
2 teaspoons fennel seeds, toasted, finely ground
2 teaspoons crushed red pepper flakes
1/4 cup minced  fresh sage leaves
1/4 cup minced fresh parsley
1/2 cup dry red wine

If you think that a sandwich is just a sandwich, then think again. Actually, first get your hands on The Encyclopedia of Sandwiches, have a look through it, and then think again. Your view of sandwiches will never be the same.

It’s hard to resist the book by its cover alone, with a photograph of a teetering triple decker sandwich (The Dagwood) and the promise of not only recipes (110 in all) but “history and trivia for everything between sliced bread.”  How can this be resisted? Author Susan Russo lures the reader in with her irreverent writing sprinkled with snippets of trivia, and punctuated with drool-worthy photos from the talented photographer Matt Armendariz.

This weighty compact book is thick and juicy with recipes and nuggets to chew on, so to speak – just like a good Reuben Sandwich. I quickly discovered that a sandwich is far more than a lunchtime staple framed by sliced bread. Start your day with an All-in-One Breakfast Sandwich (with hashbrowns, waffles, eggs and bacon),  or finish a meal with a Banana Split Sandwich (a.k.a. dessert). There is even a British Chip Butty – otherwise known as a French Fry Sandwich on this side of the pond – which handily qualifies as munchy snack food. The possibilities are seemingly endless, and this book gallantly and informatively tackles the encyclopedic task of celebrating the humble sandwich.

Despite the impressive number and variety of sandwiches in the book it was easy to select my first recipe. Pulled pork is a family favorite, and I know that Susan is an avid football fan, frequently posting enticing recipes on her blog for spicy game-viewing fare. I was keen to try her recipe for a Pulled Pork Sandwich – knowing it would be a winner.

Pulled Pork Sandwich
Makes 8-10 Sandwiches.

Coleslaw:
12 cups shredded cabbage
1/2 cup unseasoned rice vinegar
1/2 cup light brown sugar
2 teaspoons olive oil
2 teaspoons salt
1 teaspoon black pepper

8-10 cups pulled pork, shredded (recipe below)
8-10 hamburger buns or kaiser rolls
Extra barbecue sauce for serving (optional)
Pickle slices

Make the coleslaw: Place cabbage in a large bowl. Bring vinegar and sugar to a boil in a small pot over medium – high heat. Reduce to a simmer and add oil, salt and pepper. Simmer 3-5 minutes. Pour over cabbage. Refrigerate until use.

Assemble sandwiches: Place 1 cup meat in each bun. Drizzle with extra barbecue sauce if desired. Top with a scoop of coleslaw and some pickle slices. Close sandwich and serve immediately.

Pulled Pork Recipe
Makes 8-10 cups

Meat Rub:
4 tablespoons light brown sugar
1 teaspoon onion powder
4 teaspoons salt
2 teaspoons black pepper
2 teaspoons dry mustard
2 tablespoons paprika
2 tablespoons chipotle chili powder

1 (5-7 pound) boneless pork shoulder

Vinegar Barbecue Sauce:
1 1/2 cups apple cider vinegar
1 cup ketchup
2/3 cup light brown sugar
2 tablespoons Tabasco
1/4 cup stone-ground mustard

Combine all of the rub ingredients together in a small bowl. Rub the mixture all over the meat. Refrigerate the meat at least 2 hours, and preferably overnight. Remove from refrigerator 20 minutes before cooking.
Preheat oven to 250 F. Place meat, fat side up, on a rack in a shallow roasting pan. Cook uncovered 2 hours. Raise oven temperature to 350 F.  Cover meat with foil and cook until internal temperature reaches 170 F, 5-6 hours. Remove meat and place on cutting board. Tent with foil and let rest 30 minutes.
Combine vinegar sauce ingredients in a small saucepan over medium-high heat. Bring to a boil; reduce heat and simmer 5-7 minutes, stirring occasionally.
Shred the meat and place in a wide shallow dish. Pour vinegar sauce over meat and toss to coat.

Round 3 Charcutepalooza challenge: The Brine – and a Pork Rib Roast

I love brines. Give me an extra 24 hours, a box of sea salt and some spices, and I will happily submerge poultry and meat in a liquid bath. A long soak adds moisture to the protein while it brines for hours or even days, ensuring succulent results. This  month’s Charcutepalooza challenge dictated a brine, and I chose pork for several reasons. Lean pork meat can easily dry out, so it is a perfect candidate for moisture inducing brines. I also confess that I like pork best when it’s fortified and embellished with strong umami flavors and marinades, smoothing out the pork’s, er, porky flavor.

To this brine I added white wine, inspired by a pleasant memory of an exquisite roasted pork saddle we enjoyed at Incanto Restaurant in San Francisco. While a recipe was never divulged, Chef Chris Cosentino shared with us that he marinated the pork in wine for several days. And he knows his pork – which rocks. So, inspired by this memory and Charcutapalooza, I made this pork rib roast.

Wined and Brined Pork Rib Roast

If possible, let the pork brine for several days. I brined this roast for 4 days, and the results were flavorful, juicy and tender. Serves 8.

For the brine:
4 quarts water, divided
1 – 750 ml. bottle dry white wine
1 cup light brown sugar
3/4 cup coarse sea salt or kosher salt
8 sage leaves
4 rosemary sprigs
4 bay leaves
1 teaspoon juniper berries
1 teaspoon black peppercorns

1 pork rib roast, with 8 bones

For the roast:
2 garlic cloves
2 tablespoons fresh rosemary
1 tablespoon black peppercorns
4 sage leaves
2 tablespoons Dijon-style mustard
1 tablespoon freshly squeezed lemon juice
1 tablespoon olive oil

Combine 1 quart water and remaining brine ingredients (not the pork) in a pot large enough to hold the roast. Bring to a boil and cook, stirring until the salt and sugar dissolve. Remove from heat, stir in remaining 3 quarts of water and cool completely. Add pork. If pork is not entirely submerged, add additional water to cover. Cover pot and refrigerate at least 24 hours and up to 4 days.

Roast the pork:
3 hours before roasting, remove the pork from the brine and rinse under cold water. Pat dry with paper towels and refrigerate, uncovered.
Remove from refrigerator 1 hour before roasting. Smash garlic, rosemary, peppercorns and sage leaves in a mortar with pestle. Whisk in mustard, lemon juice and olive oil. Smear the paste all over the pork. Place on a rack in a baking pan. Roast in a preheated 400 F. oven until an instant-read thermometer registers 140 F. Let the pork roast rest 20 minutes before carving. Serve garnished with sage leaves and lemon wedges.
